After you’ve piped the standard mayo-mustard-yolk combo into the halved whites, sprinkle with kosher salt, and dribble a dot or two of Indian pickle onto the yolk. Yes, it does take a little getting used to, this intense stuff, containing two less-than-common spices redolent with mineral flavor: asafoetida and fenugreek.
