Image: sutraseattle.comWaiting for a recent yoga class to begin, I learned that one of my teachers at Samadhi, Colin Patterson, has a hand in opening a new veggie restaurant in Wallingford. Appropriately enough, it’s called Sutra, the term used for a principal of Vedic (or Buddhist) scripture.This restaurant has its own food-friendly principals, which fit rather nicely with those on the table at many other eco-conscious restaurants. From the website: In the Sutra kitchen our focus is amazing vegetarian food that appeases all the senses and is served in an atmosphere where sustainable agriculture, community dining, and responsible business practices are of utmost importance.Sutras can be both high-minded and practical, and where it comes to food, the next aspect of this restaurant’s philosophy seems especially promising. All of Sutra’s food is prepared fresh each day. The practice is artistic, intuitive cooking with a menu that respects the changes of season, availability of local organic ingredients, and the experience of connecting to our communities in a holistic urban environment.The restaurant is scheduled to open sometime this summer.
