Doing gourmet pizza is a tricky thing. You want it to be good, you want it to be unique. You want it to be delicious, of course. But at the same time, you can’t stray too far from the core elements of the perfect pizza–stuff on bread, as perfectly idealized by the archetypal New York thin crust.Be too timid and your “gourmet pizza” just ends up looking like something out of the kitchen at the California Pizza Kitchen. Be too bold and you end up looking weird and foolish and throwing away a helluva lot of lamb and arugula and, I don’t know…kimchi or whatever. Because honestly, no one wants that kind of stuff on their pie.Flying Squirrel, though, manages to walk that line between too much and not enough with rare and surprising grace. I insist that it is the crust that makes all the difference here–the stable base upon which all the kitchen’s art and craft must sit. Surly Gourmand detailed the omnisexual charms of the Flying Squirrel pie in a post from last week, breaking its menu down between the manly and the feminine and getting in some good digs at secretly gay Republican congressmen, the Oxygen Network and Rob Halford along the way.And now, word has come down from our friends over at Reverb that Flying Squirrel has cut a deal to start slinging the gourmet, bisexual ‘za in Ballard. Kinda.You see, Erin Thompson just got a note from the folks at the Sunset Tavern, letting her know that, starting October 10th, folks coming to the Sunset for a little bit of live music and a whole lot of beer will now be able to score some pizza to go with it.This, from Mike Jaworski of the Sunset:”Starting October 10th, The Sunset will be serving delicious Flying Squirrel pizza. Sunset owner Max Genereaux and Flying Squirrel owner Bill Coury recently wed this beautiful partnership and we couldn’t be more excited.
