We’ll have to wait another couple of months before we get to taste the newest incarnation from the pair behind Pair.

Owner Sarah Penn tells me she and her husband Felix hope to have the new seafood restaurant open by mid-October. But you know how restaurant build-outs go.

Frank’s, named after Sarah’s grandfather, will be locatd just three blocks west of Pair on 55th, the former home of Sterling Cafe.

“We are going to serve American food with natural and sustainable ingredients. It’s sort of our take of an east coast seafood and steakhouse,” Sarah told me, adding, “I spent summers in Cape Cod as a kid. So, I crave that type of seafood place where seafood is the star.”
