Today’s must-try libation from our booze columnist Zach Geballe.   That tantalizing

Today’s must-try libation from our booze columnist Zach Geballe.

That tantalizing little bit of sunny weather we had last week had me hankering for a gin cocktail. Appropriately, when I finished work Sunday night, I knew exactly what I wanted: an Aviation. One of my absolute favorites, it combines two ounces of gin, a half-ounce of lemon juice, and a quarter-ounce each of maraschino liqueur and creme de violette, resulting in a complex drink with hints of sourness, herbaceousness, and sweetness. Plus, when properly made it’s a gorgeous sky-blue color. Thankfully, this one was courtesy of Tyson at the Palace Kitchen.

Zach Geballe does a lot of drinking. When he’s not working at The Dahlia Lounge or for his business Vine Trainings, he’s studying for the Court of Master Sommeliers Exam. His weekly column here at Seattle Weekly, The Bar Code,

endeavors to inspire, educate and sometimes poke fun at all things beer, wine and spirits related.
