In the 1750s, French settlers in eastern Canada, called Acadians, were kicked off their land and forced to make their way south, eventually settling in Louisiana. Lucky for us, because those Acadians adapted their French rustic-style cooking to the available Southern ingredients–and Cajun cooking and culture was born. If you’ve always wanted to learn the cuisine’s ins and outs–like how to make a classic roux, the secret behind beignets, or what goes into those densely flavored gumbos–check out Bon Vivant’s three-hour class with Louise Hasson and learn to create a New Orleans-style meal all by yourself. (Now let’s all take a moment to thank whoever kicked those poor Canadians off their land.). $78. 7-10 p.m. Tue., July 28. For more food-related events, check out the Food Files section.
