First, a confession: I don’t love ice cream. I realize that makes me a bit of a pariah in not just the food world, but the world at large. I generally find it to be too one-note, too sweet, with not enough textures to please me. A lick or two and I’m usually sated. In college, this proved extremely frustrating for my roommate. I’d buy a pint of ice cream (because I do crave it now and again), eat a few spoonfuls, and be done with it. She would then finish it off—unable to replicate my restraint. So it’s with that caveat that I tell you I love the parfaits at Trove, Seattle’s new noodle bar, Korean barbecue joint, cocktail bar, and parfait window—the last of which cleverly uses a food truck, but keeps it under cover of a roof. Three parfaits at $6 apiece are offered, each with a “New School” and an “Old School” version. I opted for the banana split, “New School.” Served in a small glass jar (bring it back and get $1 off your next parfait), the vanilla custard is layered with chili chocolate sauce, rice crunch, and passion-fruit tapioca. The combination of the sweet but spicy chocolate, the salty crunchiness, and the tartness of the jelly-like tapioca beads hits all the right notes in flavor and texture—never a dull moment. I’m glad I don’t live too close by, but I do foresee late-night drives to Capitol Hill to satisfy a yen for these yummy, Korean-inspired confections.
