Lesson no. 1 is Pig Breakdown from 7 to 9 p.m. on March 12. For $99, you learn pig anatomy, how to chop up said pig’s body, and what cuts work best for different cooking methods, all while sipping on Swinery provided cocktails and appetizers? Drinking in class? Sign me up. Another intriguing business venture: The Baltic Room on Capitol Hill plans to operate during the day as North Star Fine Coffees by St. Patrick’s Day, according to Capitol Hill Seattle Blog. The dance club, known for its awesome bhangra/ hip-hop mash-up nights, will be open daily from 6:30 a.m. to 8:30 p.m. Designated drivers, you’ll be able to sip, too. The Baltic Room will continue to sling lattes alongside alcoholic beverages until 2 a.m.
