It’s not a big deal.Sosio’s in the Pike Place Market will glady pick out and cut your porcinis in half, nay they insist. After getting the high hat from a few vendors of mushrooms who almost refused this service, having Sosio’s do it for me without question was welcome. So if you’re going to splurge for the super expensive fungi, don’t pick them yourself; make a produce person pick them and ask if him to cut as he weighs. Someone might get a little sassy with you, but trust me, they’ll know why you make the request, and you’re paying too much for any unwanted squatters in your mushrooms.
