As mentioned in an earlier post, Chef John Sundstrom’s Lark has now opened in its new space located in the Central Agency Building on East Seneca street in Capitol Hill. The menu appears to be firmly centered in Pac NW/New American with dishes like Washington squab with wild rice polenta, maple Kabocha, and puffed wild rice featured. Along with it comes Sundstrom’s new entry in the form of Bitter/Raw – a 60 seat space that focuses on what seems to be a newly forming trend of pairing the slowest of foods in both raw shellfish and charcuterie. But wait, there’s more – Sundstrom and co. is preparing to open both Slab Sandwiches + Pie and Off The Record, a private dining and event space, in the coming weeks. A new food emporium on the Hill await your presence!

The similarities between the allegations of both Paseo and Yank Sing workers is worth noting and may set a precedent going forward. Read on to learn more on Civil Eats.
