I maintain that simplicity is next to godliness, and that seems to be Tutta Bella’s mantra, too. The restaurant pretty much does one thing—true Neapolitan pizza—and does it right. Its 11 thin-crusted pizza offerings range from the Quattro Formaggi (four cheese) to the Tutta Bella (tomatoes, mozzarella, roasted onions, hot Italian sausage, mushrooms, and Parmigiano), and all use ingredients approved by the Associazione Verace Pizza Napoletana, an important-sounding organization in Italy that sets standards for quality. Tutta Bella’s recently opened Wallingford outpost (the original one operates in Columbia City) is spacious and airy, with wooden tables and a huge open kitchen. There, you’ll want to order the Bianca pie, which comes with extra virgin olive oil, roasted garlic, oregano, roasted onions, formaggi della casa, and goat cheese. If you eat meat, buck up and spend the extra $2 to add the perfectly-salted rosemary ham. Bianca’s roasted garlic-and-onion combo, paired with soft goat cheese and a melt-in-your-mouth crust, is divine in both texture and taste. Your breath may not be stellar after eating a slice, so we don’t recommend kissing anyone (unless it’s an air kiss), but you can K.I.S.S. (keep it simple, stupid), in accordance with the Tutta Bella philosophy. 4411 Stone Way N., 206-633-3800, www.tuttabellapizza.com. WALLINGFORD
