The folks behind Herban Feast catering (and the yummy vegetarian galettes at the West Seattle Farmers Market) are opening a new restaurant in West Seattle called Fresh. I’m told the concept of the bistro is being refined by the minute, but basically, Chef Dalis Chea and his team will be offering local, organic lunches and dinners for dining in or takeout. Fresh is going into the the new Mural building — an apartment complex that is currently under contruction between Jefferson Square and Petco:It’s expected to open by May 2009.
