Some cultures might actually consider these to be gourmet hot dogs.

Jonathan Kauffman has left the building, although you’ll still be able to enjoy his work in print for the next couple issues. Those of you who read his year-end roundup of favorite dishes might have caught an element to that story in which he predicted which food trends would sink and swim in 2010. But in case you missed it, here’s what emerged from Kauffman’s crystal ball.

Foods that will capture the imagination of hipsters in 2010:

Rose geranium

Castelvetrano olives

Peanut butter (in desserts)

Padron peppers

Fermented pickles

Food Fads That Have Crested:

Korean fro-yo

Marrow bones

Mac and cheese

Truffle oil

PBRmania

Foie gras protests/counterprotests

National Trends That Will Emigrate to the Northwest:

Parisian macarons

High-end hot dogs

Fried chicken

So, will our erstwhile critic’s predictions prove true? Check your gut a year from now for the answer.
