The James-Beard-award-winning Hines, who runs Wallingford’s Tilth, is traveling right now in Istanbul, Beirut, and Cairo, doing research for her new restaurant, The Golden Beetle, set to open next month in Ballard at 1744 N.W. Market St. The place will feature flavors from the Eastern Mediterranean while following the mission she established at Tilth: to use mostly organic, sustainable ingredients. You can follow her travels on Twitter (“Tasting Turkish milk puddings”), with photos by Frank Huster. The two will put together a more comprehensive tale of their travels when they return. In the meantime, I’m pretty pumped about the Golden Beetle’s promise to showcase game birds, rabbit, and lamb. Stay tuned for more juicy details.
