One of Seattle’s most popular and celebrated bakeries, Bakery Nouveau, is letting its fans in on a few secrets. According to a lengthy piece in the West Seattle Blog, the secret is small ovens. “We use a mise en place system whereby everything is set up and ready to go so it can be baked quickly as it is needed,” owner William Leaman told the WSB. “It is sort of a short-order-cook mentality with products constantly coming out of the oven.”

Ballard’s Cuban sandwich destination, Paseo, is closing for a winter break, according to My Ballard. The popular joint will reopen on Jan. 30th — at least according to its sign.
