No loaf like a whole wheat loaf, gluten makes happy pockets of chewy, airy goodness. I recently was diagnosed with a wheat-intolerance that I am still mentally fighting (read: ignoring with painful results); so I was glad when my friend Kirsten hot tipped me on the spelt bread at Great Harvest (2218 NW Market St and other locations). Spelt might not cut it for those with celiac, but it’s a viable option for some people who have problems with wheat, and the knowledgeable and kind staff were happy to inform me about their spelt brownies and ginger snaps. (They even mill the flour right in back.)Great Harvest’s spelt bread ($6.45/loaf) is earthy, soft and has a fantastic crumb. Sandwiches with mayo and mustard receive high marks. Grilled cheese is a go, though french toast a bit earthier than usual. But I still pray I don’t develop any more pesky sensitivities.
