These fish are caught by Yup’ik villagers during a commercial fishing season that lasts only two to three weeks. Since this is the first time Yukon River salmon are available to the general public since the 1970s, it’s no wonder that Seattle chefs are lining up to prepare it in cooking demonstrations.
