In other “walking the walk” news, Tilth can now boast that the dozen and a half wines by the glass at the restaurant all rate eco-friendly. Focusing on organically-grown, sustainable, biodynamic, or LIVE certified wines is a laudable task that sounds like a no-brainer for a restaurant like Tilth, but it’s not as easy as you think. Many small European producers farm sustainably as a matter of course, and it would never occur to them to market a wine this way. Though it’s great to market these terms, their absence doesn’t necessarily mean that a winery doesn’t follow organic or biodynamic practices; so take that in to account when shopping for wine.
