Dishes team with wild foraged chanterelles, butternut squash and baby greens dripping with vitamins. But behind the homage to all things healthy and holy is the restaurant’s dirty little not-so-secret – traditional beignets from New Orleans. Often likened to a donut, a beignet (ben-YAY) is a deep fried pastry dusted in powdered sugar.What’s not to love? Proving that vegetarians like to laissez les bon temps rouler as much as carnivores, Cafe Flora deep fries these yeasty babies into golden crusted pillows. Inside, the pale yellow dough is fluffy and soft. Like the beignet’s native city, it’s naughty and delicious. Sophisticated too. This is the Pacific Northwest after all, where we can’t help but put our signature on a thing or two. Cafe Flora adds their own flourish by serving the beignets on a pool of vanilla creme anglaise ribboned with streams of blackberry coulis. Beignets at Cafe Flora come in sets of three or five (I so didn’t hear you ask for just one). This is bread meant to be broken among friends.
