Are you a bourbon lover? So is Kentucky native Jason Parker. In fact, he goes as far as to claim he has a touch of bourbon in his blood. Parker is launching Copperworks Distilling Company at 51 University St. at the base of the Harbor Steps. Its specialty: whiskey and gin. The 6,900-square-foot facility will house a distillery, a tasting room and a retail shop. Its specialty: whiskey and gin. Parker hopes to educate people about the spirits and perhaps change the opinions of those who haven’t had a good experience with either in the past.

“The biggest problem people have with harder spirits is that they’ve never been introduced to a flavor that suits their tastes,” he explains. “It’s like drinking canned beer, then drinking beer at a microbrewery, or jugged wine followed by something finer. There are so many possibilities — you can find something you like.” Expect Copperworks Distilling Company to be up and running by this fall.

Speaking of downtown happenings: Cupcake Royale opens its newest shop at 108 Pine St. this Saturday.

Capitol Hill residents can expect to see Eastside-based chain Ooba Tooba Mexican Grill launch its fifth location at 209 Broadway Ave. E. this July. The casual counter-service eatery features affordable Mexican food made fresh, including burritos, enchiladas, and more. It also boasts a salsa bar featuring five concoctions made in-house daily.

Lastly, in West Seattle, The Cask has reopened under new ownership at 2350 California Ave. S.W. Expect the remodeled pub to boast a kitchen upgrade and a food menu starting in July.
