Belper Knolle is a firm cow’s milk cheese from Switzerland coated in ground garlic, Himalayan salt and ground pepper. It looks like truffle, and you are encouraged to shave it like a truffle. Though a microplane or small cheese grater works fine, try a paring knife first, in lieu of a truffle shaver. It just ends up looking cooler. The Georgian Room at the Four Seasons shaves it onto the restaurant’s ceasar salad.Peppery and herbal, you want a crisp white that can handle this cheese and its spice, like a very dry sauvignon blanc or sparkling wine. Also recommended: a very fruity red that’s low on tannin, chilled to about the temp of the outdoors right now (55 degrees).
