With steak night Mondays and seafood boil Wednesdays now gracing the menu, why wouldnt you visit this popular neighborhood bistro in West Seattle? The menu is farm-to-table, and a good value. The regional cuisine isnt your standard salmon and salad; all of chef Dalis Cheas dishes have a unique twist of some sort, like pork belly banh mi sliders and crispy duck rolls with duck confit and truffled peanut sauce. And thats just the happy hour menu, offered every day from 4 p.m. to 6 p.m. and again from 9 p.m. to 10 p.m. (11 p.m. on Saturdays). The best happy hour deal is the bento boxes: all six $5 happy hour selections for $25. Theres also a new vegetarian bento: three $6 bites for $18. Even if youre a meat lover, youll enjoy the shiso vegetable tempura and plantain poutine with smoked mozzarella and spicy black bean gravy. Thats the thing about Fresh Bistro: Just when you think youve tasted everything on the menu, chef Dalis adds something new, giving even the most loyal customers an excuse to return. JULIEN PERRY
