Heavenly Pastry and Cake owners expect their new West Seattle store will open this spring, according to the West Seattle Blog. Heavenly Pastry has been in business since 2006 but sold its products through coffee shops, farmers’ markets and restaurants. The storefront, at 2604 California SW, will be the bakery’s first. In 2008, the Weekly dubbed the bakery’s trademark soft pretzels, “the best outside of Pennsylvania.” Also on the new bakery front is the upcoming Mini Empire Bakery in Capitol Hill. Mini Empire specializes in low-sugar pastries, smaller portions and pie, the Capitol Hill Blog reports. Currently, the bakery does not have a storefront planned but will take orders online and sell products through Capitol Hill coffee shops. Make sure to ask them about the Pie in a Jar.
