Hot: ’90s R&B playing in the dining room. Even if you don’t want to admit it, we all know the words to TLC’s “Waterfalls.” Whether I’m a member of the staff or a diner, I can’t help but dance.
Lukewarm:
Every restaurant having a charcuterie program. I love meat and am all in favor of making things in-house—but only as long as it tastes good and I don’t leave the table worried about some foodborne illness.
Freezer-burned: “Local.” Even national fast-food chains are on board. This should be a given, not a marketing tool.
