If you don't want to give up the delicious danger of eating eggs marked with a Health Department '*', it's time to take on some Huevos Rancheros. Here are five spots that know how to take your runny-yolked bliss south of the border.

4. Shadowland, 4458 California Ave. S.W., 420-3817, WEST SEATTLE
Though their neighbors down at Easy Street have the cleverly named New Wave O's Rancheros, this West Seattle haunt keeps the classic name but fries their eggs Mexican style, adds skillet potatoes to the mix and tops them off with fresh pico and avocado for $10.
It's no surprise that the winner of our 2012 Best Mexican Restaurant (and Best Margarita) makes the cut with tortillas, black beans, two eggs done with simple perfection, topped with salsa, avocado and cream for $8.95.
Pecado is the home of the fresh $3 margarita, but it's their Huevos Rancheros comprised of crisp corn tortillas, 2 eggs over medium, a mild ranchero sauce, cotija cheese, impressive green rice and black beans served with warm, soft tortillas for $8.95 that will keep you coming back. As is, it's one of the best vegetarian brunch items I've had, but carnivores can add Carne Asada for $3 more.
Coastal Kitchen's Huevos takes every element of the traditional dish and turns it up to 11; eggs sunny side up break over tangy cheddar cheese, fried corn tortillas and two dueling salsas are what you get for starters. You can add avocado ($1), sour cream ($0.50), or Chorizo ($1), for the ultimate magical Mexi-Cal breakfast experience.
