Cider: Don't Open Your Brewery Without It

Earlier this week, I took a look at some beery bills bubbling in Olympia, and devoted most of the space to an effort by brewers to bolster their cider game.

I had been emailing with Airways Brewing co-founder and brewer Alex Dittmar about the breweries serving more and more cider, but his most interesting insight hit my inbox after the column published.

"Yep," he wrote, "Cider is the hot thing right now. I wouldn't open a place without featuring it in some form."
