With the new year comes new food trucks. Eater reports that a pair of upcoming mobile eateries are nearly ready to hit the pavement, including Evolution Revolution. After sailing the globe for eight years as a chef on National Geographic-operated cruise ships, Evolution Revolution owner Singyn Hunter has settled down in Seattle. His "global comfort" menu includes shrimpcake sandwiches with pickled daikon and wild boar corn dogs.
Also, Roxy's Waffle Wagon is almost ready to roll. Offering sweet and savory options, including bacon benedict, the gourmet waffle truck is set to open by the beginning of March.
Save the date: local food truck meet-up Mobile Food Rodeo will be held on May 5 in Fremont. According to Nosh Pit, instead of scheduling two Rodeos in 2013, organizers are launching the brand new Seattle Street Food Festival this August in a to-be-named Ballard location. Farmers market stalls and restaurants will be represented, alongside mobile vendors. The fest will also include craft beer, street cooking displays, and a night market starring several emerging chefs.
