The Plan: Mom and daughter duo Pauline Harrison and Amber Cowart always knew they wanted to start a business together. So when Cowart moved from Arizona to be closer to her mom in the Seattle area a year and a half ago, they started brainstorming business ideas.
An avid cook since she was a kid, Amber naturally gravitated to exploring food-related ventures and the two landed on opening a food truck centered on the quintessential default American comfort food: grilled cheese sandwiches.With a retro pin-up logo and a website already up, these ladies know a thing or two about running a business. When they are not working on their food truck, Cowart is a financial advisor, while her mom runs a manufacturing shop that supplies parts to companies such as Boeing.
Their plan is to serve up big ol' gourmet grilled cheese sandwiches that won't leave you wanting to forage for more food afterwards. For carnivores, "The Dude" will be flush with roast beef, caramelized onion jam, swiss and asiago cheeses, garlic thyme aioli on a grilled onion bun.
Vegetarians will be satiated with the "Grace Kelly," grilled mushrooms with onion jam, creamy brie, and spinach on sourdough.
No grilled cheese sandwich is complete without a bowl of creamy soup so the duo will be cranking out tomato bisque soup topped with a dollop of heavy cream.
Got a sweet tooth? Be on the lookout for the Berry-licious grilled cheese donut sandwich. The fried pastry is made fresh daily from a shop in Kirkland and filled with blueberry compote, cinnamon mascarpone, and crumbled blue cheese.
Look out for these ladies as they roll into East side and West side locations later this summer.
