Kombucha is a beverage made by fermenting tea, with an intense carbonation created during the process. With a nearly sweet, slightly sour flavor, a bottle of the stuff must be allowed to settle before you open it----or you'll get it all over yourself. Kefir is another fermented drink, made from milk, resulting in a probiotic, effervescent beverage. Most often made with cow's milk, kefir can also be crafted with goat, sheep, coconut, or soy milk.
The lecture/demo class "Making Kombucha & Kefir" explores these traditional drinks, offering insight into their use and creation, and instruction on how to create both drinks at home.
