The Momofuku Ssam Bar owner, Manhattan celebrity chef du jour, and San Francisco public enemy number 1 was in town two weeks ago, touring his Momofuku cookbook. (Making the ramen broth from the book, a two-day process, is currently de rigeur for a certain breed of food lover.)

What did Chang think of Seattle, the Corson Building, Green Leaf, Spring Hill (where he starred in a Kim Ricketts Cooks & Books dinner), and Tom Douglas? The man, not known for his tact, tells all here -- and it all seems to be positive. Except for the young cook he spotted arguing with Nathan Myhrvold assistant Chris Young. "You've got to know who the elders are and you've got to respect them," Chang says.
