In the 1750s, French settlers in eastern Canada, called Acadians, were kicked off their land and forced to make their way south, eventually settling in Louisiana. Lucky for us, because those Acadians adapted their French rustic-style cooking to the available Southern ingredients--and Cajun cooking and culture was born.
