Second in a series in which we walk up to local bartenders and command (okay, ask politely) them to make us their favorite drink.
Bartender: The camera-shy Dan Carlisle
Location: Barca, Capitol Hill
Drink of Choice: Aviation
What’s the story? Muddle lemons for fresh juice. Add gin (Carlisle uses Plymouth) and a dash of Maraschino liqueur. Shake with ice, serve with a freshly peeled lemon twist.
Why this drink? “It’s an old drink. I think it goes back to the twenties.”
Gin in the bar with Seattle’s biggest vodka collection? “It’s a great way to drink gin."
Is this really your favorite? “I want to make something you’ll like.”
Did Carlisle pull it off? Disco! The kind of drink private eyes would be sucking down amid Hollywood castoffs waiting for a leggy redhead with a past. Not too sweet, and a hint of that gin martini dash of angst. Carlisle, Barca manager, isn’t normally behind the bar. But if you catch him slinging booze, you may want to forgo the vodka.
