Chiso's sushi ranges from good to oh-my-God, but what makes the place so attractive are its Japanese dishes with American ingredients. Attention-grabbers include a saute of geoduck and shiitakes in sake-butter sauce, pork-chive-shrimp pot stickers, and a bowl of tofu, asparagus, and mushrooms swimming in dashi broth. Even though the service is leisurely, you'll leave feeling satisfied. If you're interested in a full-on omakase menu, make a reservation at Chiso Kappo, the upstairs private dining room, where for $100 a person Chef Taichi Kitamura prepares and serves a multi-multi-course meal.
