Gourmet Glamping with Maria Hines, Wallingford Scores a New Coffee Spot

While most of us are used to boxed graham crackers, processed marshmallows and (if we’re feeling splurgy) a bar of Theo by the campfire, we can dream. And for those of us that have $448 to drop, we can bring a friend “gourmet glamping” with James Beard Award-winning chef Maria Hines (Tilth, Agrodolce, Golden Beetle) and pastry chef Sue McCown (remember Coco La Ti Da?) at Lakedale Resort in the San Juans this weekend. The price tag includes a cooking class for two, meals from the chefs and two nights in a canvas cabin that includes pillow-top bedding, bath linens and, as the press release states, “fleece-covered hot water bottles to toast guests’ toes and fend off any late night chill.” Reservations can be made online.

Back in the city, Seattle Espresso recently opened its doors in Wallingford. Owner Patty Shanks-Dizard started frothing milk back in Edmonds in the specialty coffee dark days (otherwise known as the early 80s) and has since operated a catering and coffee cart business. She still brings her espresso machine to special events but has settled into the former Julia’s Bakery space at 4405 Wallingford Ave N. The little shop features various house-made shortbreads (since cupcakes, doughnuts and pie are already more than covered in North Seattle) and offers several gluten free baked goods. Beans come from a couple of area roasters, including Lighthouse. Shanks-Dizard is also working with Market Spice to develop a custom line of coffee condiment shakers, featuring blends like espresso-flavored sea salt.
