A guy walks into a bar. He sits on a comfy black leather bench with one of the most thoughtfully crafted cocktails in Seattle and proceeds to write. What he is jotting on a white paper napkin looks something like this: "Foo Fighters or that song from the Lexus commercial." This is no joke. We've witnessed this scenario before. At Canlis. That's the fine-dining establishment where old rich people eat, right? Not so fast—Canlis is way hipper than it used to be. Not only have the Canlis brothers taken over operation of this stalwart cliff's-edge steakhouse, but the chef is a talented young dude named Jason Franey. This newfangled fountain of youth springing from Canlis means Walt the piano man is cranking out popular hits like Lady GaGa and Pearl Jam, while maintaining its overall classiness with Elton John and Coldplay. Walt's got an arsenal of melodies just waiting to be tickled on the old ivories. Just don't test his patience by yelling out requests. This isn't Chopstix, it's Canlis.
